These simple yet tasty burger buns are just the ticket for a summer BBQ or picnic. Buttery, light and topped with sesame seeds, you'll be making these brioche-like buns again and again.
Prep time: 40 mins + 3 hours proofing
Bake time: 12 - 15 mins
Total time: approx 4 hours
420g Risen Mighty White Bread Flour
170g - 200g lukewarm water
1 large egg
30g butter, at room temperature
1 1/4 tsps of salt
1 tablespoon of instant yeast
Mix all the ingredients together until well incorporated.
Knead for 10 minutes by hand or 7 minutes on a low speed if using a stand mixer until the dough is soft, stretchy and smoother. It will still be slightly sticky
Place in an oiled covered bowl and leave for around 2 hours, until it has doubled in size.
Punch it down and divide into 8 pieces.
Shape the dough pieces into balls by drawing up the sides all the way round and tucking them in. Turn the piece over, cup your hands and draw it towards you, to create surface tension. You can gently roll them in your cupped hands for a simpler alternative.
Place the 8 balls on a parchment paper lined baking tray and squash them down till they are about 3 inches thick.
Leave for final proof for another hour, covered. They will rise but don't expect then to double in shape again. Half way through this preheat your oven to 190C.
Brush with melted butter, top with sesame seeds and put in the oven for 15 - 18 minutes until golden.
